Your thermostat is probably stuck in the closed position causing the car to overheat. Big fluctuations of temp fire goes out fire box fill to top with pellets wont relight. Did a 10lb brisket yesterday. Started at 10pm the night before.

The next day I thought I hade it going then it. The gauge in the car climbs for about 10-15 seconds to about 230-40ish then suddenly the infrared temp on the housing jumps 10 degrees and rises as the gauge in the car drops back down to 210ish. It takes about 10 seconds to drop.

The gauge should register 90C and shouldnt vary regardless of outside temp or load. If the gauge varies noticeably then either the thermostat is defective or the sensor is defective. If you still have warranty get it checked.

So take your car to a mechanic and make sure that the wires are safe and intact.
When its not functioning as normal you are going to be faced with three possibilities. The gauge is too cold the gauge is too hot the gauge keeps moving up and down the scale. Thats all assuming your engine isnt cold hot or inconsistent.
