Usually this is due to either the idle being set too low or crud in the carbs. The idle needs to be set on the water as it needs backpressure to run correctly. If it idles fine then disassemble and clean the carbs good.

I did a total rebuild and clean on the carbs and it still stalls when I first put it in gear and try to accelerate unless I hit the choke a little. First I turned up the idle to around 1000. When I go to put it in gear it drops to around 750.

A bit of backstory. Your problem is your lower shift cable. After time they stretch and it kills the engine because the switch cannot work correctly.

The directions have you loosening that screw and the screw to the right of it the throttle stop screw both of which are spring loaded.
